Este aceite es la selección del maestro de almazara de Oro del Desierto. Los primeros aceites obtenidos entre finales de octubre y principios del mes de noviembre, provenientes de las variedades Arbequina, Hojiblanca y Picual son almacenados en lotes de 2000L donde se analizan y seleccionan para “ensamblarlos” en diferente proporción para esta tirada anual limitada.

Recogida: Desde mediados de octubre a mediados de noviembre.

Numero de botellas cosecha: La producción es de aprox. 60.000 botellas con presentación en etiqueta de estaño en 250 o 500ml.

Presentación: Botella 500ml y 250ml. Etiquetas de Estaño

Producción: Extracción en frío 2 fases. Únicamente con aceitunas en envero muy temprano, 75-80%
aun verdes.

Variedades: Arbequina 20%, Hojiblanca 20% y Picual 60%
Zona: Finca el vicario, Desierto de Tabernas (Almería)

Análisis organoléptico y sensorial:

– Color/aspecto: Aceite color verde hoja con tintes dorados, limpio de filtración.

– Perfume/bouquet: En nariz notas de hierba recién cortada, tomate, aceituna verde y recuerdo de
cítricos y frutos secos en menor intensidad.

– Sabor/sensación buco-táctil: En boca entrada suave con leves toques amargor casi imperceptible y
algo más de picor. Retrogusto agradable con persistencia del sabor frutado de la aceituna y vagos
recuerdos del picor.

Es un aceite de frutado medio-suave y equilibrado dado que combina el sabor de 3 variedades de
aceituna que se complementan perfectamente y confieren cada una propiedades excepcionales al
conjunto.

Un aceite muy premiado y uno de los mejores aceites del mundo año tras año.

Tiene el Certificado Ecológico de la UE(ES-ECO-001-AN) y JAS
